Directions:  
Place 2 tsp olive oil in a pan and add onion and garlic, cook for just about 2 min then add spinach. cook down. Put veggies in a large bowl, add everything else except the meat, whisk. Then add meat. Stir well. Make golf ball (little bigger) size balls and place on a baking sheet lined with foil and spray. Bake about 18 min, then turn oven to broil to brown them. Serve with an organic pasta sauce, and use spaghetti squash for pasta.
