Directions:

Peel onion and cut them in half lengthwise and then quarter them.

Quarter the zucchini and cut it into chunks

Core and seed the three peppers and cut into chunks

Heat one tablespoon of oil in a skillet. Add onions, garlic, carrots, thyme, salt and pepper. Cook for ten minutes.

Preheat oven to 425

Stir in zucchini and peppers cook for another 10 minutes

Transfer to large baking dish, bake at 425 for 25 minutes stirring every ten minutes

Sprinkle lemon pepper seasoning and other tablespoon of olive oil on top of salmon while vegetables are baking. Rub into salmon.

Place Salmon - skin side down on top of the vegetables and continue baking for another 15 minutes - until fish internal temperature is 165 degrees
