Directions:  
Pre heat oven to 425, set wire rack on top of baking sheet. Spray rack with non-stick spray.

Peel the sweet potatoes.
Grate the potatoes and squeeze the moisture out. ( I squeezed with my hand) less moisture means crispier.

Add egg whites, cheese, pepper, and Rosemary to the grated potatoes.

Scoop out the mix and set on the wire rack. Press the sweet potatoes very thin.
Bake for 30 minutes until crispy
