Directions:  
Preheat oven to 350 F and spray a loaf pan with cooking spray. Combine white flour, whole wheat pastry flour, oat bran, brown sugar, baking soda, salt, cinnamon, and oats together in a large bowl. Combine soy milk and vinegar, and let sit for a few minutes to curdle. Combine eggs, water, oil, applesauce, vanilla, milk, molasses and bananas in a medium bowl. Make a well in center of dry ingredients. Pour wet ingredients into the dry ingredients and stir gently just until the dry ingredients are moistened. Fold in 1/2 cup walnuts. Spoon batter into the prepared pan. Bake for 45-50 minutes, until a toothpick inserted in the center comes out clean. Cool on a wire rack in the pan for 15 minutes. Remove from pan and cool completely.
