Directions:  
Sautee the onions and leeks in EVOO. Add sliced beets and apples and all water, boil. Add cardamon up to 3 tsp to taste. Add cider vinegar up to 4 T to taste. Also to taste add ground cloves and 1/2 tsp dried thyme. Simmer on med-hi until everything tender. Soup will be very sweet but contains no sugar or artificial sweeteners.
