Description: Whole wheat high fiber english muffin, with egg, caramelized onions, canadian bacon, and cheese. Make ahead a freeze in tinfoil in freezer. Thaw 40 seconds wrapped in paper towel in microwave. Then rewrap in foil and place in toasted oven to bake for 5-8 min on 375.

Directions:
Cook chopped onion in olive oil over medium heat until caramelized, about 20 min. Toast muffins halfway 3 at a time in toaster oven Place each 1/4 cup egg in microwavable bowl 4oz sprayed with oil Place a small amount of cheese and onion on top of egg and cover egg bowls with plastic wrap. Cook on high power for one minute or until desired doneness. I do three at a time in the microwave. Set cooked eggs aside to cool for about 20 min. To assemble: Place a dried ham slice on the bottom of 6 muffin halves . Top with cooked eggs with onions and cheese. They will come out easily once cooled. Top with other muffin half. You can either eat while still warm or let them cool completely ( they will get soggy if wrapped too soon in the tinfoil) and then wrap them individually and freeze for another time.
