Directions:  
Prepare pie crust. Preheat oven to 350 degrees F. Put rack on bottom shelf.
Place sweet potatos in large bowl, chop roughly with a butter knife. Whip with hand beater until smooth.

Add remaining ingredients, beat until well blended and fluffy. Scrape sides of bowl a couple of times to insure every bit is mixed in.
Pour into pie crust, spread to even thickness in crust. Place in oven and bake 55 - 60 minutes. After 30 minutes, cover crust with tin foil pie crust shield to prevent over browning of crust.
Remove when center of pie comes out mostly clean with toothpick.
Let cool.
Serve with whipped cream.
