Wrap the pumpkin in cling film and microwave on high for 3 to 4 minutes or until almost cooked.

Cut chicken thighs into chunks.

Drain chickpeas.

Place chicken, pumpkin, chickpeas and curry sauce in a saucepan. Wash jar with about ¼ cup of hot water and add to saucepan. Cover, bring to the boil then reduce heat and cook on medium for 30 minutes, or until cooked.

Optional: Serve with steamed rice and garnish with fresh coriander.
