Directions:  
Mix eggs, add cheeses, chopped green pepper, and tomatoes. I used my own sun dried tomatoes and also roasted 10 grape tomatoes. You can also roast a red, yellow pepper. You can do almost anything for veg.
Bake in greased 9" glass pie pan at 350 fro 30 min.
Also really good with chopped kale, must put tinfoil on top if you use kale instead of peppers.
P.S. You can also substitute 1/3 c cream cheese instead of ricotta cheese.
