Preheat the oven (broil) and place the spinach into a steamer. Spread the olive oil and minced garlic onto the pita. Chop chicken, mushrooms, 3/4 of the onion and place on top of the pita. Take spinach out and pat dry. Spread spinach onto the pita. Cover with 12 cup of cheese. Put in the oven. Cook until cheese is melted and starting to brown on top. In the meantime, chop tomato and add it to remaining onion. Add balsamic vinegar to coat. Scoop on top of the pita pizza, cut and enjoy.
