Directions:  
Mince garlic. Heat oil in a large skillet and add garlic and onion and cook until onion is soft, about 3 minutes. Meanwhile, cut chicken into bite-sized pieces and add to pan along with spices, stirring well to coat. Cook until chicken is slightly browned, about 3-5 minutes. Add coconut milk and vegetable broth, lower heat and simmer until chicken is cooked through. Before serving, sprinkle in lime juice and season to taste with salt and pepper.
