Place one piece of chicken, boned side up, between 2 pieces of clear plastic wrap. Working from the center toward the edges, pound lightly with meat mallet to approximately 1/4 inch thickness. Remove plastic wrap. Repeat with remaining pieces of chicken.
Spray large skillet with cooking spray and preheat to medium heat. Cook chicken breasts in skillet , two at a time, until tender and no pink remains. Transfer to platter and keep warm.
Add mushrooms, green onions, water, and salt to skillet. Cook over medium heat until mushrooms are tender and most of water has evaporated (about 3 minutes).
Add Marsala or sherry to skillet. Heat through.
Place chicken breasts in skillet to warm in sauce.
