Pre-heat oven to 350
2.Lay chicken breasts flat on a length of plastic wrap.

Top each breast with a slice of prosciutto and a leaf of sage.

Affix with tooth picks and season with salt and pepper.

Place another sheet of plastic wrap on top of the prepared chicken breasts and with a meat mallet or a heavy frying pan, lightly flatten the chicken.

Remove plastic and dredge the flattened chicken with the flour and shake off excess.

Heat olive oil in a large frying pan until it starts to shimmer. 8.CAREFULLY place the chicken, sage side down, into the oil and gently sauté for three minutes, shaking the pan to keep the chicken from sticking.

Turn the breasts and continue for another 3 minutes.

Add the wine to the pan and stir well, scraping the bottom of the pan to remove any tasty morsels stuck there.

Adjust seasoning and place a slice of provolone on top of each breast. Place pan in the oven and bake for about 10 minutes until chicken reaches an internal temperature of
