Description: grilled chicken breast, zucchini, peppers, and onion on a ciabatta baguette with spices oil and vinegar. I grilled vegetables and chicken on the George Foreman grill and hollowed out the center of the baguette. (also grilled the sandwich in a cast iron pan with a bacon press-could use a pannini press.)

Directions:
Mix olive oil, vinegar and spices in small bowl. Slightly flatten chicken breast to uniform thickness. Brush with olive oil and grill on both sides until done. Slice zucchini lengthwise or on the diagonal about 1/4" and brush green pepper, onion slices, and zucchini with olive oil. Grill on both sides until slightly tender and well marked. Cut and split a piece of the demi baguette and hollow out most of insides. Assemble the chicken and vegetables in the roll and heat in grill pan under pressure-weights or pannini press.
