Directions:  
Heat olive oil in a large soup pot over med heat. Add onions, carrots, celery and salt and sweat until the onions are translucent, about 5 minutes. Add the lentils, tomatoes, broth, peppers and cumin. Stir to combine. Increase the heat to high and bring to a boil. Reduce the heat to low , cover and cook at a low simmer until the lentils are tender, approximately 35-40 minutes. Using a sharp knife make a cut on one end of the sausage links. Remove sausage meat from the casing by squeezing meat through opening. Heat olive oil in a large pan over medium heat. Add sauage meat and cook until golden brown, breaking it up as you cook.. Drain any fat. Add to lentil soup and serve hot.
