Directions:  
Halve chicken cutlets widthwise to make 4 pieces. Halve, core, and slice pears. cut onion into wedges. combine flour and pepper in shallow dish. dredge chicken in flour mixture to coat and set aside. heat 1 TBS oil in large nonstick skillet over medium heat. add onion and cook 5 minutes until slightly brown. add spinach and cook 1 minute or until wilted. place mixture on serving plate.
heat remaining oil in same skillet, add chicken turning once cooking fro 8 minutes total turning once. add cider and thyme, bring to boil. reduce heat to low and simmer 5 minutes until sauce is reduced by half. place chicken on spinach mixture, drizzle with sauce and sprinkle with walnuts
