Cook rice according to package directions. Drain.

As rice cooks, add teaspoon of butter to large skillet over medium-high heat. Season chicken with salt and pepper. Add chicken to pan and cook 3 minutes on each side or until done. Remove from pan.

Add cider and mustard to pan, stirring loose browned bits. Cook 2 to 3 minutes. Add chicken back to the pan, turning to coat. Remove from heat; set aside.

Add remaining butter to pan over medium-high heat; cook for 2 minutes. Low heat and add pecans. Stir frequently for 1 minute to toast. Add rice and a pinch of salt. Toss well. Serve rice with chicken. Garnish with chopped parsley.
