Directions:  
Preheat oven to 375.
Place cooked and cooled quinoa in large bowl. Line 8x8 pan with parchment paper.

In a small bowl, whisk eggs, half and half, vanilla, and cinnamon until combined.
Add egg mixture to quinoa and combine with a spoon.
Pour into pan and bake for 20-25 minutes. Using parchment, remove from pan and cool. Cut into squares.
