Preheat oven to 450

Thread shrimp onto 8 skewers. in a small bowl beat egg white with sesame oil. Brush on both sides of shrimp and season with salt and pepper.

place shredded coconut in a shallow container and coat each skewer with coconut. Place on a baking sheet.

Spray both sides of shrimp with Pam and place in ove,. Bake 5 minutes on one side then turn over and continue baking until shrimp are cooked through and cocout is lightly browned, about 2-3 minutes longer. Remove and serve with sweet chili sauce.
