Description: This is a vegan adaptation of the corn chowder recipe from the Joy of Cooking.
Ingredients:  Makes 7 servings (7 cups)

Directions:  
Sauté onion, celery, and pepper in corn oil until golden brown.
Add water, potatoes, salt, paprika, and bay leaf. Bring to a boil. Simmer 45 minutes, or until potatoes tender.
Stir flour into 1/2 cup of the almond milk to make slurry. Pour mixture into soup, heat for about 5 minutes as it thickens.
Meanwhile, heat remaining almond milk in microwave or small saucepan.
Add heated milk and corn kernels. Heat through, but do not boil.
Serve sprinkled with chopped parsley.
