Directions:  
Heat milk till scalded.
Beat eggs in separate bowl with the sugar, salt and vanilla.
Pour in a small amount of the heated milk to bring the eggs up to temp.
Add the remaining milk slowly beating with fork all the time.
Pour 1/2 cup of the mixture in each ramikin. Top with sprinkling of nutmeg.
Put ramekins in water bath in larger pan.
Bake at 325 for up to 30 min. Test with knife till it comes clean.
