Directions:  
fully cook chicken breasts and cut into 1/2 inch cubes

slice tortillas in to 1/2 inch strips

heat chicken stock and tortillas on high until strips soften and broth thickens somewhat.

Stir in enchilada sauces and cumin and half-and-half; heat through

Stir in chicken and simmer for 10 minutes

garnish with diced tomato, jalapeno pepper, and cheese
