Directions:

Cover the farro with cold water. Stir once & let soak 25 minutes. Drain and rinse well.

Put the farro into a medium-large saucepan. Add 2 cups cold water & 1/4 tsp of salt. Cover & bring to a oil, then lower so that it's just simmering. Cook til water is absorbed & farro is tender (like rice) - it's about 30 minutes.

In a large skillet heat both oils & a pinch of salt over medium heat. Add quartered mushrooms &cook until a deep brown, about 10 minutes. Set aside.

Add the bok choy to the pan w/a pinch of salt. (Note: It's ok if the pan is dry). Cook until stems begin to brown & leaves wilt - about 1 minute. Pour in remaining 1/4 cup of water and cover. Steam until tender - about 2 minutes. It's ok if there's a bit of water left in the pan.

Stir in cooked farro and mushrooms and 2 TLB of chimichurri. Stir until hot & glossy. Serve hot w/ additional chimichurri if desired.
