Directions:

Heat the olive oil over medium heat in a pan.

Slice the eggplant into thin rounds and soak in salt water for at least 5 min.

Mix the flour, salt and pepper.

Coat the eggplant slices with the four mixture.

Fry the slices. If cut thinly, with a pan on medium heat, they should take no more than 45-60 seconds each side.

Remove fried slices from the oil and place them on a paper towel (to absorb excess grease).

Eat immediately. Gets soggy easily and does not reheat well.
