Directions:
Place almonds, coconut, protein, vanilla and flax meal in a food processor and pulse six to eight times to combine. Melt oil, almond butter, and honey together and add to almond mixture pulsing to combine after each is added. Pour mixture onto a small cookie sheet sprayed with cooking spray and spread evenly. Pat down with wet hands to smooth evenly. Place in refrigerator for about 10 minutes to set. Chop or break chocolate into smaller pieces in the top of a double boiler allow with chocolate chips and let melt until smooth. If you don't have a double boiler, place chips and chocolate in a small saucepan and cook on low heat or place in a bowl and microwave for 30 seconds and stir and repeat until chocolate is melted and smooth. Pour over bars and spread quickly before chocolate sets. Place in the fridge for at least 15 minutes to set before cutting. Makes about 16 bars. Bottom is soft once it comes to room temp so turn it upside down to enjoy.
