Spray a large saucepan with the cooking spray and brown the mince.

Add onion, mushrooms, carrot, tomatoes, stock and herbs. When the water starts boiling, reduce the heat and simmer for 20 minutes without a cover. Season with herb mix to taste.

Preheat the oven to Gas Mark 5 / 190°C / 375°F.

Place half the cooked meat into a baking dish and lay half the lasagne sheets on top.

Beat the low fat soft cheese and egg together and stir in the milk. Spread one third of the mixture over the lasagne. Layer the rest of the meat and lasagne sheets on top, and spread over the rest of the mixture. Bake in the oven for 40 minutes, until golden.
