Lemony linguine with sausage

2  ounces		fresh linguine
1  teaspoon		extra-virgin olive oil
3		Daystarter turkey sausages
1  tablespoon		sliced shallot
9  ounces		baby spinach
1/2		Juice of 1 lemon

- Bring 3 quarts water to boil in large saucepan
- Add 1 (9 oz) pkg fresh linguine, cook until al dente, Drain, reserving liquid
- Meanwhile, heat 2 tsp oil in large nonstick skillet over med-high heat
- Add sausage links, casings removed
- Cook, breaking up with spoon until browned, 5 min. Transfer to plate
- Add sliced shallot to pan and cook, stirring, until golden, 2 min, add to sausage
- Add spinach and cook, stirring, just until wilted, 3 min
- Return sausage & shallot to skillet and cook, stirring, until heated
- Add pasta, 1/3 C reserved liquid, grated lemon zest and juice
- Cook, stirring, until heated through
- Serve and enjoy
