Blend ricotta, oregano, salt, and pepper in processor or blender.

Rub chicken with garlic powder.

Heat coconut oil in large skillet over medium heat.

Add chicken and cook for about 12 minutes per side.

Remove from skillet and place in large baking dish.

Pre-heat oven to 350 degrees.

When chicken has cooled enough to keep the ricotta from sliding off, spoon 1/4 cup of cheese mixture and a tomato slice on each breast half.

Then top each with 1 serving of Fresh Mozzarella

Bake in oven for about 20 minutes or until chicken is done (about 170 degrees internally) and juices run clear
