Directions:  
Scrub potato, wipe dry, cut in half lengthwise. Divide onions along the two halves, put the two halves together and wrap loosely in plastic wrap, pierce plastic. Place in microwave oven and cook on high for 7 minutes or until soft. (Or wrap in foil and bake in 400-degree oven for one hour or until tender.) When done, scoop onion and potatoes into small mixing bowl (being careful not to pierce the skin). Add milk, margarine, salt and pepper; mash until smooth, Divide potato-onion mixture evenly between two potato shells. To bake immediately: Sprinkle with Parmesan cheese and paprika, place under broiler until warm and slightly brown. To bake later: Wrap in foil and refrigerate until 25 minutes before serving, sprinkle with Parmesan cheese and paprika, let set at room temperature 15 minutes, then place under the broiler and broil until warm and slightly brown.
