Directions:  
Peel eggplant and discard skin.
Grate meat with grater attachment in food processor.
Place eggplant in a clean tea towel and squeeze over sink to remove excess liquid.

Whisk egg and add to batter.
Add salt and pepper and herbs if desired.
Roll between two pieces of parchment paper to 1/8 inch thick.
Remove top sheet and place on cookie sheet.
Brush with oil.
Bake at 350 do for 30-35 minutes.
Remove from oven, replace parchment, flip carefully onto second cookie sheet and remove top parchment.
Brush with oil.
Bake further 30 minutes.
