Heat oil in large saucepan and fry the onions, carrot and turnip for 3-4 minutes. Add the vegetable stock and bring to a boil. cover and sime gently for 20 minutes.

Put the couscous in a bowl and moisten with boiling water, stirring, until the grains have swollen and seperated (make sure you have cut all the veggies - else couscous will cool off too much)

Add the tomatoes, courgettes, pepper and green beans to the saucepan.

Stir in the lemon rind, saffron and turmeric into the couscous and mix well. Simmer the vegetables for 8-10 minutes.

Pile the couscous on plates and ladle the vegetables and some of the liquid on top. Scatter with the cilantro and garnish with fresh parsley.
