Directions:

Cover dry beans with about 1 inch water. Pressure on high for 1 (one) minute. Release pressure and Strain in colander. Set aside.

Turn pressure cooker on saute, hot. When hot add the bacon and cook until most of the fat has rendered out.

Add the onions, celery and pepper. Saute for 4-5 minutes until they start to get tendeer.

Cut the sausage in half lenghtwise then into 1/2 inch moons. Add the garlic and sausage to pot. Cook another 33-4 minutes, stirring often.

Add remaining ingredients to pressure cooker., close lid and steam vent.

Pressure on high for 55 minutes. Let pressure cooker release naturally, about 10-18 minutes.

Smash about 1/3 of the beans with potato masher or spatula and mix until creamy.

Serve alone or over rice.
