Saute carrot, onion and celery in non stick cooking spray.

Add broth and ham hock and cook until vegetables are tender.

Remove vegetables and discard. Cool broth and remove all fat.
Remove meat from ham hock and discard bone, fat and skin.

Return broth to heat and add 1 1/2 C water. Return meat to broth and add lentils. Cook until lentils are tender, about 90 min. Salt to taste.
