In a medium pan, saute the onion, carrot, celery, and 1/2 tsp olive oil for 5 minutes

Add the water, uncooked quinoa, peanut butter, and soy sauce

Bring to a boil and then reduce the heat, cover, and simmer until the water is absorbed, about 10 minutes

In a second pan, saute the bok choy, garlic, salt, ground black pepper, and remaining olive oil

Add the cooked chicken

Serve the chicken mixture over the quinoa mixture
