Directions:

Bring the coconut milk, water, and salt to a boil in a medium saucepan. Add rice and reduce heat to simmer. Simmer rice for 40 to 45 minutes until done.

While rices is cooking, prepare the rest of the ingredients.

Stir fry the remaining ingredients starting with the peppers and onions. Stir fry 3 to 4 minutes and then add garlic, cashews and ginger. Stir fry for 2 to 3 minutes. Then add pineapple and stir fry 5 minutes more.

Add the remaining ingredients. Stir well.

Stir the pineapple mixture into the rice and the serve.
