Directions:  
In a large bowl, combine 2 c. flour, mashed potatoes, sugar, undissolved yeast (2 packages or 16 g.) and salt.

Heat water (reserved from boiling potatoes or tap water) and butter until very warm; stir into flour mixture. Stir in remaining flour to make a soft dough. Knead on lightly floured surface for 6-8 minutes or until smooth and elastic. Can use a stand mixer with the bread hook on speed 2. Cover and let rest 10 minutes.

Divide dough into 16 equal pieces and form into balls. (Can be divided into 2 small loaves instead). Place in two greased 8" or 9" round cake pans. Cover and let rise in warm, draft-free place until doubled in size (20-40 minutes).

Sprinkle with 1 Tbsp flour and bake in a 400F oven for 20 minutes or until golden brown. Remove from pans and cool on wire racks.
