Directions:  
Sautee quinoa with onions and mushrooms in olive oil until vegetables are tender and quinoa is getting golden brown. Add chicken broth and remaining vegetables. Cook until liquied is absorbed. Approx 15 minutes.
If serving hot, top with feta
If serving cold, stir in feta.
