Preheat oven to 350F. Whisk eggs and water until blended and add salt and pepper if desired. Spray muffin pan wells (9) with Pam. Place roasted zucchini mixture in bottom of prepared cups. Divide egg mixture evenly and bake for 12-15 minutes (convection oven) or slightly longer for conventional oven) until toothpick comes out clean after piercing middle. Let cool slightly and remove from pan. Let cool on rack and place in container with wax paper between layers and store in fridge until needed. Reheat in microwave for 30-45 seconds.
