Directions:

Peal and chop the butternut squash, onion, garlic and apple into bite size cubes.

bring cast iron pan to med high heat, add the oil. When Hot add the chopped vegetables, stir to coat with the oil. Place in a preheated 400 degree oven for 15 minutes.

remove from oven and add salt and sage, and black pepper to taste. Lift and stir vegetables to fully coat again, put back in oven for another 15 minutes.

meanwhile, cut pork chop into small strips about 1/4 " wide, and about an inch long. Stir Fry in another cast iron or not stick pan over medium heat using just a little oil to stop from sticking. Cook until pork just begins to brown, and is cooked through.

After the 2nd 15 minutes, remove vegetables from oven, add the cooked pork, brown sugar and cinnamon (optional), Again toss gently to incorportate all ingredients evenly. Cook in oven an aditional 15 minutes.
Serve.
