Directions:

Preheat oven to 450 degrees F. Spray a baking sheet with olive oil.

Season pollock with black pepper or paprika if desired. Place on baking sheet with tomato slices and salsa on top.

Bake in preheated oven until fish is cooked and flakes easily (about 15 minutes.)

Turn oven off, place one slice of cheese on each fillet. Return fish to the oven and allow cheese to melt, about 3 minutes.

Serve with steamed veggies and wild rice.
