Trim fat from chops. Brush both sides of chops with the 2 t. oil. Sprinkle Sugar and Spice Rub evenly over chops; rub in with your fingers. Place chops on a plate. cover and marinate in the refrigerator for 1 hour.

In a large skillet heat the 1 T oil over medium-high heat. Add chops; cook for 10 to 12 minutes. Transfer chops to a serving platter; cover and keep warm.

Gradually add wine to the skillet, stirring to scrape up any crusty browned bits. Add apples, broth, and one sprig of thyme. Bring to boiling; reduce heat. Simmer, covered, about 3 minutes or just until apples are tender. Using a slotted spoon, transfer apples to a small bowl; cover and keep warm.

Brig broth mixture in skillet to boiling. Boil, uncovered, about 5 minutes or until liquid is reduced by half. Return chops and apples to skillet; heat through.
