Preheat the grill to medium.

Combine the oil, garlic, rosemary, and salt in a small dish. Spread the mixture on the top of the mushroom caps as well as on the stem side. Grill the mushrooms stem side up over direct heat for 2 minutes. Move to indirect heat. Grill for 12 minutes, or until juices start to accumulate.

Meanwhile, place the roasted pepper in a food processor and process to a smooth purée. Add the tahini and ground red pepper (if using) and pulse to combine. With the machine running, drizzle in enough of the warm water to make the mixture smooth and fluffy.

Carefully transfer the grilled mushrooms to 4 plates. Dollop the roasted pepper-sesame sauce over each mushroom. Garnish with parsley, if desired.
