Directions:  
Heat oil in skillet. Saute' peppers and onion until soft. Add tomatoes, and heat through. In medium bowl, whisk together eggs, cilantro, salt, pepper. red pepper,cumin, and garlic. pour over vegetables in the skillet. mix together and cook until eggs are done to taste.
