Sauté the chopped carrot, onion and mushrooms in olive oil under medium heat for at least 10 minutes

Turn the heat up to high and mix in the mince beef. Stir until all the meat is safely browned, 5-10 minutes.

Return to medium heat. Add the two cans of chopped tomato and mix. Let simmer for 20-30 minutes.

Serve with cooked and drained whole durum wheat pasta. Top with parmesan cheese.
