Rinse mussels in cold running water & scrub with vegetable brush

Heat oil in stockpot & saute the shallot, garlic, thyme

Add the mussels and mix

Add wine, lemon juice, broth and red pepper flakes
5
Cover the pot and steam over med/high for 5 min until mussels open
6
Toss in tomato, parsley and butter, cover and steam for another minute to soften
