Directions:  
Thinly slice three 4-5" long Asian or Mediterranean cucumbers into a plastic bowl. Add rice vinegar and 2-3 packets of preferred sweetener. Cover bowl tightly and shake to mix well. Refrigerate, shaking bowl periodically, for 1-2 hours. Serve.
Optional Garnish: fresh pea shoots (no calories), chopped green onions (no calories), baby salad shrimp (11 calories for 2 Tbsp)
