Melt butter in a non-stick skillet over low heat.

Pour half and half into skillet. Break eggs into skillet one at a time.

Add cayenne pepper and salt to taste.

Cook eggs, basting with half and half, until done, turning eggs over if desired.

Transfer eggs to individual serving plates. Sprinkle with Swiss cheese before serving.
