Directions:

Peel the jicama and julienne, using a mandolin, into spaghetti-sized ropes.

Julienne the carrot similarly, but without peeling.

Add other veges.

Whisk lime juice, xylitol and fish sauce (or blend) until xylitol is dissolved.

Pour sauce over veges and mix well.

When serving, sprinkle with peanuts.
