Description: Extra firm tofu, pan stir-fried with peppers, tomatoes, shallots, and garlic, in hoisin sauce.
Ingredients:  Makes 1 serving

Directions:

Chop garlic, cut tofu into cubes, finely chop shallots, shred cabbage, slice red pepper and chop tomato.

Heat oil in a skillet or wok over medium heat.

Sauté garlic. Add tofu and cook for 5 to 7 minutes or until tofu is crispy.

Add shallots, cabbage, red bell pepper, half of the bean sprouts and tomato and cook 3 to 4 minutes over high heat.

Stir in soy sauce and hoisin sauce.

To serve: Top with remaining bean sprouts.
