Directions:

Pick over beans and place them in a large bowl. Cover with water and soak over night.

After beans have soaked, preheat oven to 350F.

Heat the oil in a small sauce pan. Add the garlic and sage and saute over low heat, stirring occasionally, for 3-5 minutes. Remove from heat and set aside.

Drain the Beans and place them in a large sauce pan with enough water to cover them. Bring to a boil for 10 minutes, then drain again.

Place the beans into a casserole dish add the leek, and tomatoes. Stir in the garlic and sage. add enough water to cover the beans by about 1". Mix well and cover with foil or lid. Bake for 105 minutes

Remove from oven, uncover. Season to taste with salt and pepper and stir. Return to oven uncovered for 15 min or until the beans are tender.

Remove from oven and let stand at least 7-8 min before serving
